  Health benefits of carrots Carrots contain vitamins A, B1, B2, B3, B6, C, E and K and also contain substances such as Miacin, Folate and the minerals Phosphorus, Calcium, Potassium, Magnesium and Selenium. The "Beta-carotene" substance in carrots is beneficial for the eyes, it increases the ability to see, and it also prevents the damage caused by sugar in the eye and cataracts. Carrots control the level of sugar in the blood, and prevent the retirement or lack of activity of cells that produce insulin. Carrots are among the foods that boost the immune system, which activates the white cells that protect the body against various types of infections.
